Alcoholic distillation is a process that separates and purifies the components of a liquid mixture by utilizing their different boiling points. During this process, alcohols selectively evaporate based on their boiling temperatures.

The process consists of three distinct separation phases known as heads, hearts, and tails, each with different characteristics and properties that are important for obtaining a quality final product.

The heads phase is the first to be distilled, where volatile components with lower boiling points, such as methanol and other undesirable compounds, are removed due to their toxicity or unpleasant flavors. This phase is recognized by its strong and pungent odor.

At the beginning of distillation, compounds with lower boiling points, like methanol, evaporate first. Due to its toxicity, it is discarded and not used in distilled alcoholic beverages.

Next comes the hearts phase, where the desired main component, ethanol, is distilled along with other volatile compounds that contribute to the characteristic flavors and aromas of the alcoholic beverage. The hearts are the central and most important part of the distillate, as it is where the alcohol is concentrated, and the essence of the beverage is obtained. During this phase, the aim is to obtain a high-quality and well-balanced distillate in terms of flavor. Ethanol is the primary desired component in the production of alcoholic beverages and is responsible for their psychoactive effects.
